Medi's Vegan Sandwich

Ingredients 
    - 2 slices Genesis 1:29® Sprouted Whole Grain and Seed Bread, toasted
 - Vegenaise (vegan mayonaise)
 - thinly sliced tomato
 - thinly sliced red onion
 - fresh baby arugula or spring mix baby lettuce
 - fresh thai basil (optional)
 - salt & freshly ground pepper (optional)
 
Directions 
    - Toast the two slices of Genesis 1:29 bread and spread each slice with Vegenaise.
 - On one of the slices of bread, layer ingredients in this order: tomato, salt & pepper, onion, lettuce, and thai basil.
 - Cover with remaining slice of toasted bread that has been spread with Veganaise.
 - Cut in half and serve immediately, otherwise it will start to get soggy and drippy from the tomato.
